GINGER BEEF 
Prepare in advance:

2 c. chicken broth
2 tbsp. soy sauce
2 tbsp. sherry
1 tsp. ginger
1 tsp. sugar

Set aside. Heat 2 tablespoons oil in wok at 375 degrees. Stir fry for 3 minutes:

1 c. chopped celery
1 bunch chopped broccoli
1/2 c. green onion

Remove. Heat 2 tablespoons oil in wok at 375 degrees. Stir fry until done:

1 lb. shredded beef

Add vegetables and sauce. Cook for a minute. Combine:

2 tbsp. cornstarch
4 tbsp. water

Add to vegetables and sauce, cook until sauce thickens. Serve over white rice.
