SQUASH MUFFINS 
1 egg
1 c. milk
2/3 c. yellow squash, grated
1/2 c. sugar
2 c. plain flour
1 tbsp. baking powder
1/4 tsp. salt
2 tbsp. oil

Beat egg; add milk and squash. Combine dry ingredients; stir into squash mixture. Stir in oil. Grease muffin tins and heat at 350 degrees until hot. Spoon batter into tins, filling 2/3 full. Bake at 350 degrees about 20 minutes or until brown. Makes one dozen.
