STRAWBERRY BUTTER 
2 c. strawberries, chopped
1/2 tsp. lemon rind, grated
1/4 tsp. nutmeg
4 c. sugar
2 tbsp. lemon juice
1 envelope liquid fruit pectin (I use Certo)

Combine strawberries, lemon rind and nutmeg in bowl; mix well. Add sugar; mix well. Let stand for 10 minutes. Combine lemon juice and pectin in small bowl; mix well. Add to strawberries, stirring constantly for 3 minutes. Spoon into four 8 ounce plastic containers, leaving 1/2 inch headspace. Cover with tight-fitting lids. Let stand 24 hours. Store in refrigerator for 2 to 3 weeks or in freezer. Great gift ideas. Stencil top with strawberries denoting flavor. Yield: 4 cups.
