STUFFED SNOW PEA PODS WITH FIRST
LADY'S CHEESE SPREAD
 
Don't let too much time go by without making these. What a splash these pea pods will make! The spread is excellent for stuffing celery or other items, but you must use the pea pods for a wonderful effect. You will be proud.

Wash carefully several handfuls of pea pods and blanch them in boiling water for 30 seconds only. Drain and plunge into ice water. Refrigerate covered until ready to use. Just before using, snip off the stem end at an angle, open the pods, and fill with the First Lady's Cheese Spread (recipe follows).

1/2 c. dry white wine
Juice of 2 lemons
1 tbsp. white pepper
4 tbsp. snipped chives
2 tbsp. marjoram
3 cloves minced garlic
2 tbsp. sweet basil
2 lbs. cream cheese

NOTE: Use more basil and marjoram if using fresh.

Simmer all ingredients except cream cheese in a saucepan for 15 minutes. Place in a food processor with the cream cheese. Mix well. Chill for several days prior to ripen. Serve pea pods (or you choice) stuffed with this delicious spread at room temperature. By the way, this spread can be served between two slices of your favorite dark bread. A very interesting combination.
