SPINACH OR BROCCOLI SOUP 
8 c. tightly packed fresh chopped or 2 pkgs. (10 oz. each) frozen, chopped
spinach or broccoli
8 c. chicken broth
1/4 tsp. nutmeg
1/4 tsp. pepper
Salt to taste
4 tbsp. butter
1/4 c. flour
2 c. half and half

In kettle place spinach or broccoli, chicken broth, nutmeg, salt and pepper. Bring to boil and simmer until spinach is tender. In another pan melt butter, stir in flour and cook until mixture is bubbly. Gradually stir in half and half. Cook, stirring constantly until thick and bubbly. Stir in 1 cup of spinach or broccoli mixture into white sauce, gradually stirring all white sauce mixture into spinach or broccoli mixture, combining well. Makes about 12 servings.
