FRENCH MARKET SOUP | |
1/4 c. each black beans, navy beans, red beans, pinto beans, black eye peas, split peas, garbanzo beans, baby limas, lentils, barley 1 tbsp. salt Wash dry bean mixture, drain. Add water and salt. Soak overnight. Drain. 4 or 5 hamhocks 2 bay leaves 1/2 tsp. thyme Add to drained beans. Cover and simmer 3 hours. 2 med. onions, chopped 1 lg. green pepper, chopped 2 ribs celery, chopped 2 cloves garlic 1/2 tbsp. red pepper Green onions Add and simmer uncovered for 1 1/2 hours. 1 lb. smoked sausage Add and cook until chicken is done. Remove chicken from bones and return to pot. Add 2 tablespoons parsley about 10 minutes before serving. |
