CONFETTI BROCCOLI | |
1 large bag broccoli florets (fresh, pre-washed) 1 large red and yellow pepper Parmesan cheese bacon bits (dried brand, not fried, stays crispier) Italian dressing (any brand) Put broccoli florets in large bowl and place in the refrigerator until peppers are prepared. Set oven temperature to broil. Rinse peppers with cool water and place peppers on bare oven rack. No foil needed. You may want to place a pan with a little water in it on the rack under the peppers so when they begin to cook the pepper juice has somewhere to drip. Stay close to oven, check the peppers approximately every 1-2 minutes until the peppers have charring on their skin. Using an oven mitten, flip peppers on all sides until charred all over and semi-soft. Remove the peppers from the oven and allow to cool for approximately 5 minutes. Once cool, begin peeling and rubbing all the charred skin off of the pepper. Cut open the peppers; remove the seeds and stem on top and discard. Remove broccoli from refrigerator, dice and add peppers, add Parmesan cheese as desired; add the bacon bits and finally the Italian dressing (as much or as little as you like).
