CORNED BEEF DINNER | |
4 to 5 lb. corned beef brisket 1 med. yellow onion, peeled and stuck with 4 whole cloves 5 whole peppercorns 1 rib of celery, washed and cut in half 1 bay leaf 2 parsley sprigs 1 clove garlic, peeled 6 med. potatoes 6 carrots 1 med. head of cabbage Place all ingredients except carrots, potatoes, cabbage in large kettle, making sure all are covered with water, bring to a full boil. Reduce heat to simmer. Cook 3 to 4 hours. Last half hour add carrots and potatoes and last 15 minutes add cabbage. |
