CARROT CAKE | |
1 1/2 c. cooking oil 2 c. sugar 4 whole eggs, beaten 2 c. plain flour 3 tsp. cinnamon 2 tsp. baking soda 1 tsp. salt 3 c. grated carrots Mix oil and sugar. Beat well. Add eggs, one at a time. Sift flour, cinnamon, soda and salt 2 or 3 times. Add to creamed mixture. Add carrots, a small amount at a time. Bake in 3 (8 inch) cake pans that have been greased and floured. Bake at 325 degrees for 30 minutes. FROSTING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla 1 c. chopped pecans or walnuts Blend all ingredients well. Spread on cake. |
