CINNAMON NUTS 
1 c. sugar
1/2 tsp. cinnamon
1/8 tsp. cream of tartar
1/4 c. water
1 1/2 to 2 c. walnuts
1/2 tsp. vanilla

Mix first 4 ingredients in saucepan and boil until a little of the mixture forms a firm ball when dropped in cold water (246 degrees). Add nuts, cool slightly. Add vanilla and stir until mixture sugars and coats the nuts. Turn out on waxed paper or lightly greased platter and quickly separate nuts. When dry, store in tins.
