TABOULI SALAD 
1 c. bulgar wheat
1 1/2 c. boiling water
1 tsp. salt
2 limes or 1 lemon/1 lime
1/4 c. olive oil
2 cloves garlic
Handful fresh mint
Handful fresh parsley
2-3 scallions (with greens)
1 med. to lg. green pepper
2 med. tomatoes

Step 1: In medium-large bowl, combine 1 cup bulgar wheat, 1 1/2 cups boiling water and 1 teaspoon salt. Cover; let stand 20 minutes.

Step 2: Mix together, then add to above 1/4 cup olive oil, juice of 2 limes (or lemon/lime) and 2 cloves garlic, crushed. Cover; refrigerate 3 hours.

Step 3: Chop and then add to above 2-3 scallions, including greens, green pepper, fresh parsley and fresh mint. Cover; refrigerate overnight (or for a few hours).

Step 4: Chop and add tomatoes. Cover; refrigerate until serving.
