BARBECUED POT ROAST | |
4-5 lb. pot roast 2 tsp. salt 1/4 tsp. pepper 2 tbsp. butter 1/2 c. water 1 c. tomato juice 3 med. onions, chopped 3 cloves garlic, chopped 2 tbsp. brown sugar 1/2 tsp. dry mustard 1/4 c. lemon juice 1/4 c. vinegar 1/4 c. catsup 1 tbsp. Worcestershire sauce Rub the surface of the roast with salt and pepper. Brown in butter on all sides. Add water, tomato juice, onion and garlic. Simmer for 1 1/2 hours. Mix the remaining ingredients. Add to the meat and simmer for 2 hours. The gravy may be strained before serving, but it is good just the way it is! |
