COCONUT PIE 
1 c. sugar
4 tbsp. flour or cornstarch
1 stick butter
4 eggs (separated)
4 c. milk
vanilla flavoring
coconut
2 baked pie crusts

Mix sugar, flour, and cornstarch. Add melted butter, 4 egg yolks, and milk, stir until well mixed. Cook in microwave two minutes at a time until thick. Add vanilla and coconut. Pour into two baked pie shells. Top with meringue.

Meringue:

4 egg whites
8 tbsp. sugar
1 tsp. vanilla flavor
coconut

Beat egg whites until stiff. Add sugar and beat well. Add vanilla flavoring. Cover top of pie with meringue, sealing all edges. Sprinkle coconut on top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
