LOW CALORIE CHEESE CAKE 
1 (24 oz.) carton cottage cheese
1 1/2 c. skim or low-fat milk
5 eggs
1 tsp. vanilla
1/4 tsp. almond extract
1/4 tsp. salt
3/4 c. sugar
3/4 c. all-purpose flour

Combine cottage cheese and milk in a blender or large bowl. Beat until smooth. Add eggs, flavorings, and salt. Beat until smooth. Combine sugar and flour. Add to cheese mixture and blend thoroughly.

Pour mixture into a buttered 9 x 9 inch dish and set dish in a pan of hot water. Bake at 350 degrees for 1 hour and 10 minutes, or until a knife inserted comes out clean. Cool. Top with fruit or jam if desired.
