CHICKEN & MUSHROOM SALAD 
2 oz. canned chicken, diced
1/2 c. diced celery
2 tsp. reduced calorie mayonnaise
Salt & pepper
Lettuce
1/2 c. drained canned mushrooms
1/2 tsp. lemon juice or vinegar

Combine all ingredients except lettuce. Toss lightly. Serve on lettuce. Shrimp, tuna, salmon or turkey may be substituted for chicken. 2 meat exchanges, 2 fat exchanges, 2 vegetable exchanges.
