PYRACANTHA JELLY 
2 qt. pyracantha berries made into 3 c. pyracantha juice
7 c. sugar
Juice of 2 lemons
1 box Certo
5 tbsp. vinegar

Pick berries when they are deep red, wash, remove stems. For each pound of berries add 1 cup water and boil 20-25 minutes until berries pop open. Drain at once in a bag of several thicknesses of cheesecloth. When dripping has almost stopped press bag to capture juices. Mix sugar, pyracantha juice and lemon juice in a pot and bring to a boil. Then adding the Sure Jell or Certo and vinegar boil the combination for 2 minutes. Finally pour the reddish mixture into sterilized jars and seal.
