GLOSSY GINGER CARROTS 
1/2 lb. sm. whole carrots
2 tbsp. butter
2 tbsp. thawed frozen orange juice concentrate
1/4 tsp. salt
1/4 tsp. ginger
1 1/2 tsp. honey

Melt butter in small skillet; blend in orange juice, honey, ginger, and salt. Add carrots; cover tightly and cook over low heat, about 20 minutes or until tender, turning twice. If desired, garnish with fresh mint leaves.
