SESAME CHICKEN | |
8 skinless, boneless chicken breasts, halved Flour 2 eggs, beaten 2 tbsp. soy sauce 2 tbsp. sesame oil 1 c. bread crumbs 1/4 c. sesame seeds 1 tsp. paprika 1/2 tsp. garlic powder 1/2 tsp. salt 1/4 tsp. pepper SAUCE: Sm. jar apricot preserves 2-3 cloves garlic, crushed 3 tbsp. soy sauce 1 tbsp. water Cut chicken into long "fingers". Dip fingers into flour, then mixture of eggs, soy sauce and water, then into mixture of crumbs, sesame seeds, paprika, garlic powder, salt and pepper. Brown in oil 4 to 5 minutes on each side. Combine ingredients for sauce and heat through. Serve with sauce. May be prepared ahead and reheated at 350 degrees for 15 minutes. 6-8 servings. |
