POACHED SALMON 
4-6 lb. whole salmon
1 lemon, sliced
1 onion, sliced
1 carrot, sliced
1 rib celery, sliced
1 bay leaf
1 c. dry white wine
Parsley

Green mayonnaise
1 c. mayonnaise
2 tbsp. chopped chives or green onions
2 tbsp. minced dill or 1 tsp. dry dill
1 tbsp. chopped parsley
Dash of Worcestershire sauce
Drop green food coloring

Rinse salmon thoroughly. While it's best to wrap fish in cheese cloth, it can be made without if it is handled carefully. Place fish in either a fish poacher or a large roasting pan. Cover with water to which has been added the remaining ingredients. Cook either in the oven or on top of the stove 9 minutes to the pound after water starts to boil. Remove very carefully to cool. Remove gray, fatty portions, arrange on a platter and chill. Serve with green mayonnaise.
