EASY LEMON SQUARES 
1/4 lb. butter
1 c. flour
1/4 c. confectioners' sugar

Mix flour with confectioners' sugar. Blend in butter. Pat the crumbly mixture into greased 9-inch square pan. Bake 15 minutes at 350 degrees.

FILLING:

2 eggs
1 c. sugar
2 tbsp. flour
2 tbsp. lemon juice
1-2 tsp. grated lemon rind

Mix beaten eggs with sugar, flour, lemon juice and rind. Pour over baked mixture and bake 25 minutes at 325 degrees. While still warm, sprinkle with confectioners' sugar. Makes 12 squares.
