ARROZ CON POLLO | |
1 (3 lb.) chicken, cut in pieces 2-3 c. long rice 1/4 c. oil 1/2 onion, chopped 1/2 red pepper, chopped 1/2 green pepper, chopped 2 garlic, chopped 2 garlic, sliced 1 can tomato sauce 1 seasoning envelope (Sason) Salt Pepper Water Seas on chicken with salt, pepper and crushed garlic (ahead of time, better the day before). Heat oil in heavy pan and brown chicken, about 5 minutes. Add water to cover the chicken, onions, red and green pepper, sliced garlic and salt and pepper to taste. Boil in medium heat for about 15 minutes. Add tomato sauce and seasoning envelope, boil. Add the rice and more water, if necessary, to cover rice, about 1/4 inch over rice. Cook covered in low heat until water evaporates. Stir rice and chicken and continue cooking until rice and chicken are tender (done). |
