PUMPKIN BREAD | |
1 1/2 c. all-purpose flour 1 c. sugar 1/2 tsp. salt 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1 tsp. baking soda 1 c. cooked pumpkin 1 c. cooking oil 2 lg. or 3 sm. eggs 1 pkg. instant coconut cream pudding 1 c. chopped nuts 1 c. raisins Sift and measure into a small bowl the flour, sugar, salt, nutmeg, cinnamon and baking soda. In a large bowl, beat thoroughly pumpkin, oil and eggs. Add dry mixture to pumpkin mixture. Add pudding, nuts and raisins. Fill 2 medium or 1 large bread pan. Bake at 350 degrees for 1 hour. Use double recipe for cake. |
