CORN GEMS (CORNBREAD) 
1 cup cornmeal
1 cup flour
1 cup milk
1/2 cup butter or shortening
1/2 cup sugar
2 eggs
2 tbsp. baking powder
1/2 tsp. salt

Preheat oven to 350°F.

Mix cornmeal, flour, baking powder and salt. Mix milk, eggs and butter/shortening. Add milk mixture to cornmeal mixture. Stir only enough to mix.

Fill greased baking pan (iron skillet) half full.

Bake until light brown on top. Brush tops with melted butter.
