PARMESAN CHICKEN 
4 chicken breasts, skinned, deboned and split
1/3 c. flour
1/2 c. grated Parmesan cheese
1/4 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
1 1/3 c. Minute Rice
1/2 tsp. butter
1 can Campbell's cream of chicken soup
1 c. frozen peas
1 c. frozen carrots

Combine flour, grated Parmesan cheese, salt and pepper in a bowl and roll rinsed chicken breasts in this mixture until heavily coated. Place chicken breasts in microwave pan with 1/4 cup of water. Sprinkle with paprika. Cover with Glad Wrap and microwave 9 minutes per pound.

Prepare Minute Rice according to directions on box. Heat cream of chicken soup, peas, and carrots to boiling point and simmer for 1 minute. Spoon 3-4 tablespoons of soup and vegetables over each rice serving and place chicken breast pieces on top. Sprinkle with paprika. This is good served with a Jello fruit salad. This is really a quick meal.

Since microwave ovens vary in power, you may need to adjust your cooking time.
