FROZEN STRAWBERRY JAM 
1 qt. fresh strawberries, rinsed and hulled
4 c. sugar
1/2 tsp. grated lime rind
2 tbsp. lime juice
1 pouch (3 oz.) liquid fruit pectin

Crush enough berries to make 1 3/4 cups; add sugar and lime rind, mixing thoroughly. Let mixture stand at room temperature for 10 minutes. Combine lime juice with pectin; stir into fruit mixture.

Continue stirring for 3 minutes. Pour into clean containers, leaving 1/2 inch headspace; cover with tight-fitting lids.

Let stand at room temperature for 24 hours. Refrigerate up to 3 weeks or store in freezer.
