CATFISH STEW 
4 lb. catfish
2 qt. water
1/3 c. self-rising flour
1/3 c. plain meal
1/2 stick butter
1 med. onion, chopped
1 egg
3/4 c. canned milk
3/4 c. homogenized milk
Salt & pepper to taste
Hot Sauce (optional)

Boil catfish in water until tender and debone. Place catfish back in water and add butter, onion, salt and pepper. Mix meal, flour, egg and milk until smooth. Add to catfish mixture. Continue to cook on medium heat until smooth.
