TACO SALAD | |
1 1/2 lbs. ground beef 1 sm. bunch green onions 1 lg. head lettuce 1 pt. cherry tomatoes 1 sm. can kidney beans 1 lg. (4 c. size) grated cheddar cheese 1 (12 oz.) size reg. Fritos 1 lg. bottle Catalina dressing Brown the ground beef with green onions, chopped. No additional seasoning is necessary for this salad. Chop the lettuce and half or quarter the cherry tomatoes. Place the lettuce and tomatoes in a very large bowl. Drain the kidney beans and add to lettuce. Drain the ground beef and onions well and dump on top of the lettuce, does not matter if still a little warm. Throw in the cheddar cheese and Fritos. Mix a little to sort of toss everything around then pour entire large bottle of dressing in and mix well. It's great as is or chilled. If chilling or taking to somewhere and it's going to be a while before you eat, always put the Fritos and dressing in just before serving. This prevents the Fritos and the lettuce from wilting. |
