STUFFED ZUCCHINI 
8 sm. zucchini
4 c. soft bread crumbs
3/4 c. grated Parmesan
2 beaten eggs
1 med. onion, minced
3 tbsp. parsley, minced
Salt, pepper, butter, paprika

Preheat oven to 350 degrees. Cut ends off but don't peel zucchini; cut in halves lengthwise. Scoop out pulp with spoon (leave 1/4 inch rim around edge). Chop pulp with remaining ingredients except butter and paprika. Fill shells. Dot with butter, sprinkle with paprika. Bake 30 minutes or until done.
