BEEF STUFFED ZUCCHINI 
3 (8 oz. each) med. zucchini
1 lb. ground beef
1 sm. onion, diced
Vegetable oil
1/4 tsp. oregano leaves
1/4 tsp. pepper
1 (15 oz.) can tomato sauce
1 (4 oz.) Mozzarella cheese
3/4 tsp. salt
1/4 c. water

Cut each zucchini lengthwise in half. Scoop out center. Leave 1/4 to 1/2 inch thick shell. Dice up scoop out zucchini. In a 12 inch skillet over medium high heat, cook ground beef, onion and diced zucchini until meat is browned and onion and zucchini are tender, stirring occasionally. Add vegetables if necessary. Stir in oregano, pepper, half tomato sauce, half cheese and salt. Remove skillet form heat. Into each zucchini shell put mixture. In same skillet stir water, sauce, and salt. Arrange zucchini in pan. Heat to boiling. Cover and cook until done. Sprinkle cheese over zucchini.
