HUSHPUPPIES 
1 c. self rising cornmeal
1/2 c. self rising flour
1 med. onion, chopped fine
1 tsp. ketchup
2 oz. beer
1 egg
Salt & pepper (liberal)
Buttermilk (less than 1/2 pt.)

Stir together ingredients. Add buttermilk to make thick batter. Refrigerate for 30 minutes. Pour 1/2" to 1" oil in iron skillet. Spoon batter into hot oil. Fry until lightly browned. Place hush puppies in a Styrofoam ice bucket to keep warm. Serve hot.
