LEMON POPPY MUFFINS 
3 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. butter
1 c. sugar
3 eggs
1 c. sour cream
1/3 c. lemon juice
1 1/2 tsp. vanilla
1/4 c. poppy seed

Sift flour, soda, baking powder and salt. Cream butter and sugar. Add eggs. Add flour and sour cream, then lemon juice and vanilla. Beat at low speed. Fold in poppy seed. Makes 24 muffins. Sprinkle tops with sugar before baking. Bake 18 to 20 minutes at 350 degrees.
