AMISH SUGAR COOKIES 
1 c. sugar
1 c. butter
1 c. confectioners' sugar
1 c. oil
4 1/2 c. plain flour (more may be needed)
1 tsp. cream of tartar
1 tsp. baking soda
1 tsp. salt
2 eggs
1 tsp. vanilla

Cream sugars, butter and oil. Add eggs and beat well; add vanilla; beat. Combine flour, cream of tartar, salt, soda and slowly add to mixture; mixing well. Drop by walnut size balls into sugar. Place on ungreased baking sheet and flatten with fork. Bake at 375 degrees for 10-12 minutes.
