PEACH COBBLER 
1/2 c. sugar
1 tbsp. cornstarch
2 1/2 c. peaches (fresh, canned or frozen)
1 c. flour
1 tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. shortening
1/2 c. milk

Mix in saucepan, sugar and cornstarch, stir in gradually peaches; bring to boil and boil 1 minute, stirring constantly. Pour into 1 1/2 quart baking dish and dot with butter. Sprinkle with cinnamon. Sift together flour, sugar, baking powder and salt. Cut shortening in with pastry blender until mixture looks like meal, stir in milk. Drop by spoonfuls into hot fruit. Bake at 400 degrees for 25 to 30 minutes until golden brown. Serve with cream or ice cream.
