DOT'S BEEF STEW 
1 lb. beef cubes, browned
2 tbsp. oil
1 (14 1/2 oz.) can beef gravy
1 1/2 c. tomato juice
2 c. cut carrots
2 c. cut potatoes
1 c. par-boiled peas

Brown beef cubes in hot oil. Drain. Add gravy and tomato juice. Cover and simmer for 5 minutes. Place vegetables in deep casserole. Add meat and liquid. Cover and bake for 1 hour at 350 degrees. Add peas, cover and cook for 1/2 hour longer.
