SARAH'S RED RICE 
3 strips bacon
1 c. chopped celery
1 c. chopped green pepper
1 med. onion, chopped
1 can tomatoes, mashed
2 tbsp. sugar
Salt and pepper to taste
1 to 1 1/2 c. cooked rice

Fry bacon in frying pan; remove bacon from pan. Add celery, green pepper, and onion in grease and saute. Add tomatoes, sugar, salt, and pepper. Reduce heat to medium and cook for about 10 to 15 minutes. Crumble bacon and add to tomato mixture. Pour over cooked rice and mix. May serve immediately or place in baking dish to keep warm until ready to serve. Serves 6 to 8.
