BUTTERSCOTCH PICNIC BARS 
2 1/2 c. whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
2/3 c. butter or 3/4 c. oil
2 1/4 c. packed brown sugar
4 eggs, well beaten
3/4 c. quick cooking oatmeal
6 oz. pkg. (1 c.) butterscotch morsels
3/4 c. chopped nuts

Sift together twice, the flour, baking powder and salt. Melt butter in saucepan. Stir in sugar. Cool. Add beaten eggs. Beat until smooth. Add dry ingredients and blend. Add butterscotch morsels and nuts. Mix well. Spread evenly in cake pan (or cookie sheet) and bake 25 minutes at 350 degrees. Cool and cut into bars.

Variation: Substitute chocolate chips or raisins.
