RASPBERRY CHEESECAKE TARTS 
Vanilla wafers
2 eggs
1/2 c. sugar
2 (8 oz.) pkgs. cream cheese
1 tsp. vanilla
1 pkg. foil cupcake papers

Preheat oven to 325 degrees. Mix cream cheese, sugar and vanilla together. Slowly blend in sugar.

Place a vanilla wafer in the bottom of each cupcake paper then fill cups 3/4 full of mixture. Bake for 20-25 minutes. Cool. Top with fruit or chocolate frosting. Refrigerate. Makes 1 dozen.
