1 c. shortening (1/2 butter for flavor)
2 c. brown sugar
1 tsp. baking soda
2 eggs
1/4 c. hot water
1 c. shredded coconut
1 tsp. vanilla
4 1/2 c. flour
1/4 tsp. salt
1 1/2 tsp. baking powder

Cream shortening; add sugar gradually and cream thoroughly. Blend in well beaten eggs. Add baking soda to liquid, and blend into creamed mixture. Blend in coconut and vanilla. Mix well. Sift flour, salt and baking powder together, and blend into coconut mixture. Mix well. Chill. Form balls size of walnuts; flatten with fork. Bake at 400 degrees, 8 minutes.
