INDIAN SILK PUDDING 
1 qt. yogurt
1 c. sugar
1 tsp. rosewater
Seed from 1 cardamom pod, ground
1/2 tsp. ground nutmeg
1/ tsp. crumbled saffon threads

Place yogurt in a square of fine muslin and hang over the sink to drain. Let drain for twelve hours.

Rubber band another piece of muslin firmly to a large, heavy bowl. Put half the yogurt and half the sugar in the muslin. Work the yogurt and half the sugar through the muslin into the bowl. Do the same thing with the remaining yogurt and sugar. (The fine, silky consistency of the dish requires use of the muslin in this way.)

Remove the muslin, taking care to scrape the bottom of the muslin. Add the rosewater and cardamom, nutmeg and saffron threads to the yogurt. Stir well. Chill and serve. Serves 6.
