GUINEA SQUASH PIE 
1 med. eggplant
3 slices toast
Small amount of milk (to soften the above toast)
2 eggs
1 chopped onion
3 tbsp. melted butter
1 tsp. salt
Pepper to taste
2 tbsp. cream

Peel the eggplant and boil in slightly salted water. When done, drain and mash. Soak the toast in enough milk to soften it and mix with the eggplant. Beat eggs slightly and add to above. Blend in chopped onion, melted butter, salt and pepper.

Pour into a buttered baking dish. Pour 2 tablespoons cream over it and bake at 350 degrees for 25 minutes until golden brown. Serves 6-8.
