NON-FAT FRUITED OAT BRAN MUFFINS 
2 1/4 c. oat bran
1/4 c. brown sugar
1 tbsp. baking powder
1/2 c. skim milk
20 oz. can crushed pineapple
2 egg whites
2 tbsp. applesauce
1/4 c. raisins

Preheat oven to 425 degrees. Place first 3 ingredients in food processor and pulse until oat bran looks like flour. Mix remaining ingredients with bran mixture in food processor or by hand. Prepare 18 small or 12 large muffin tins with Pam or paper liners. Bake 17 minutes.
