SCALLOPED CHICKEN 
1 med. sized hen, cooked
2 c. soft bread crumbs
1 c. cooked rice, drained
1/4 c. diced pimentos
4 beaten eggs
1 tsp. salt and pepper
1/4 c. butter
3 c. milk or chicken stock
1 tbsp. chopped celery
1 tbsp. onion juice

Mix ingredients in order named. Pour into greased ring mold or cook in casserole. Bake in slow oven 325 degrees for 1 hour and 15 minutes. Let stand 10 minutes and turn out on platter. Fill center with mushroom sauce.

MUSHROOM SAUCE:

4 tbsp. butter
5 tbsp. flour
2 c. stock
1 tbsp. parsley
1 tbsp. lemon juice
Small can mushrooms
2 beaten egg yolks
1/4 c. thick cream

Make like any white sauce and then add mushrooms (chopped) and egg yolks at same time. Mix with cream.
