SWEET POTATO BISCUITS 
2 c. flour
4 tsp. baking powder
1 tsp. sugar
1/4 c. butter
1 (17 oz.) can sweet potatoes, drained and mashed
1/2 c. milk

Combine dry ingredients, cut in butter until mixture resembles coarse crumbs. Stir in sweet potatoes and milk, mixing until just moist. On densily floured surface, knead dough about 10 times.

Roll out to 1/2 inch thickness. Cut with biscuit cutter.

Place on ungreased cookie sheet. Bake at 400 degrees for 12 to 15 minutes or until lightly brown.

Makes one dozen biscuits.
