GO AHEAD BRUNCH 
5 tbsp. butter
3/4 c. chopped onion
2 c. diced ham
6 eggs, beaten
3 tbsp. chives
1 c. grated Cheddar cheese
6 tbsp. half and half
1/4 tsp. salt
Pepper to taste
1 (12 oz.) pkg. hash brown potatoes (4 squares frozen)

Cook onions in butter, not brown. Add ham and cook 5 minutes. Beat eggs. Add chives, cheese, cream and seasonings. Mix well. Blend in ham and onions. Add hash browns. Pour mixture into 8 x 12 baking dish. Bake 30 to 40 minutes or until brown at 375 degrees. Can be made the night before and kept in refrigerator.
