STUFFED ZUCCHINI 
2 med. zucchini, halved lengthwise
1/2 lb. hot Italian sausage
1 sm. onion, chopped
1 clove garlic crushed (1/8 tsp. garlic powder)
1/3 c. Italian bread crumbs
1/4 c. Parmesan cheese
1/4 lb. Mozzarella cheese, shredded

Cook zucchini in boiling, salted water 10 minutes; drain. Scoop out in sides, leaving 1/4 inch shell. Mash insides; drain well. Put shells in a shallow baking dish. Cook sausage in skillet 15 minutes. Add onions and garlic. Saute until tender. Stir in mashed zucchini and bread crumbs. Spoon mixture into shells. Sprinkle with cheese. Bake in 350 degree oven for 30 minutes.
