CANDIED SWEET POTATOES - EASY! | |
4 sweet potatoes (of similar size) brown sugar cinnamon butter pancake syrup Amounts vary with number of potatoes and desired sweetness. Sweet potatoes baked in a conventional oven usually have a sweeter taste which would require less brown sugar and syrup. Wash sweet potatoes and poke fork holes on 2 sides of each potato. Then cook in microwave until done (approx. 12 minutes, flipping potatoes after 5 minutes). Peel and slice when cool enough to handle. Place in microwave safe dish. Sprinkle top of sweet potatoes with cinnamon. Crumble brown sugar over top (approx. 1/2 cup depending on amount of sweet potatoes). Dot with butter (approx. 2 tablespoons). Squirt pancake syrup over sweet potatoes (approx. 1/3 cup). Cover dish with plastic wrap and microwave on high for 3 1/2 minutes. Let potatoes rest for 5 minutes before serving.
