DEEP-FRIED ONION RINGS 
6 med. Bermuda or mild white onions
1 beaten egg
1 c. milk
3 tbsp. oil
1 c. plus 2 tbsp. flour
1/2 tsp. salt
Cooking oil for deep frying

Peel and cut onions into 1/4-inch rings. Combine egg, milk and 3 tablespoons oil. Blend in flour and salt until must moistened. Heat oil to 375 degrees. Coat onions with batter and fry a few at a time, about 2-3 minutes, until golden brown.

Remove from oil and drain on paper toweling. Sprinkle with salt before serving.
