YUM - YUM SALAD 
1 (#2) can crushed pineapple
3/4 c. sugar
1 pkg. lemon or orange Jello, lime may also be used
1 c. cold water
1 c. grated cheese (mild cheddar)
1 c. whipping cream, whipped
3/4 c. walnuts or 5 pecans, chopped

Boil together until syrupy the pineapple and sugar. Soak the Jello in the 1 cup cold water and add to the hot pineapple mixture. When this begins to congeal, add grated cheese and whipping cream. Then add walnuts or pecans (optional). Pour into a 9 x 9 inch dish and set in refrigerator to congeal. Makes 8 large servings. May easily be doubled.
