BANANA OR PUMPKIN ROLL | |
3 eggs (beaten 5 min.) 3/4 c. sugar 1 tsp. vanilla 1 tsp. baking soda 1/2 tsp. salt Banana or pumpkin mixture 3/4 c. flour BANANA MIXTURE; 2/3 c. mashed bananas 1 tsp. banana flavoring 1 tsp. lemon juice PUMPKIN MIXTURE: 2/3 c. pumpkin 1 tsp. cinnamon 1 tsp. ginger 1 tsp. nutmeg FILLING: 1 (8 oz.) pkg. cream cheese, room temp. 1 c. powdered sugar 4 tbsp. butter 1 tsp. vanilla 1/2 c. chopped walnuts or pecans Mix beaten eggs with sugar, vanilla, baking soda and salt. Add banana or pumpkin mixture. Add flour and mix well. Pour into well greased and floured jelly roll pan. Bake at 375 degrees for 15 minutes. Turn onto tea towel while still warm and roll up in towel. Let cool 20 minutes. Unroll and spread filling evenly. Re-roll. Wrap in plastic wrap. Refrigerate or freeze. FILLING: Cream together well the cream cheese, powdered sugar, butter and vanilla. Add chopped walnuts or pecans. |
