CHICKEN BREAST WITH MOZZARELLA | |
4 chicken breasts boned and skinned 1/2 c. butter at room temperature 2 tbsp. chopped parsley 1 tsp. dry marjoram 1/2 tsp. thyme 1 c. fresh bread crumbs 1/2 c. flour 2 eggs, beaten 1/2 c. chicken broth 1/4 lb. Mozzarella cheese Place chicken in wax paper and pound to 1/8 inch thick. Sprinkle with salt and pepper. Spread chicken with 1/2 of butter put herbs in other half of butter. Cut cheese in sticks and roll in center of each breast. Put toothpick into hold. Roll in flour, dip in beaten eggs then roll in bread crumbs, put in baking dish, put melted butter and herbs over chicken. Bake 20 minutes. Then add chicken broth and baste and cook 15 minutes longer or until done at 350 degrees. |
